PRAWNS IN CHILLI AND GARLIC RECIPE - JOSÉ PIZARRO
Prawns in chilli and garlic
125ml extra virgin olive oil
4 cloves garlic, finely sliced
2 red chillies, finely sliced
8 gambas blanca (or raw king prawns), peeled but tails left on
Flakey sea salt
2 slices of lemon
1-2 tbsp chopped flat leaf parsley
Crusty bread to serve
Heat the oil in a traditional terracotta dish or in a frying pan. Once hot add the garlic and chill and cook for a minute to allow the flavours to infuse.
Add the prawns and lemon slices and cook for 1-2 minutes until the prawns are just cooked. Scatter with parsley and serve with crusty bread to mop up the juices.
